Greyson is a lover of cheerios, plain, multigrain you name it. So I thought why not switch up his snack of cheerios and make them a little more fun by adding some peanut butter, honey, coconut, and cinnamon. And the verdict is…

They are AMAZING! My husband even loves them and so do I. Plus if you are wanting to add other dried fruits or nuts to the mix it is as easy as replacing some cheerios with whatever extra ingredient you desire.

Cereal Bars have to be one of the easiest snacks to make and they can be packed with tons of different nuts and dried fruits. They are also a great alternative to granola bars and make for a great afternoon snack to put in your little one’s lunch or to eat at home. So that is why I am sharing this super simple and delicious recipe with you.

Some super yummy add-ins are, hemp hearts, chia seeds, almonds, puffed quinoa, cocoa nibs and anything else you can think of! Or you can add dried fruits such as dried apples, blueberries or cranberries. As well, Peanut Butter cand be replaced with any nut butter and honey can be replaced with agave or a similar sweetener of your choice. So what kind of cereal bars will you be making this weekend?

Simple Cereal Bars

Servings: 12

Ingredients

  • 1.5 cup Cheerios
  • 1.5 cup Puffed Rice
  • 1/4 cup Coconut (shredded, unsweetened)
  • 1/2 cup Honey
  • 1/2 cup Nut Butter (i used natural peanut butter)
  • 1/4 tsp Cinnamon

Instructions

  • Start by combining all the dry ingredients into a bowl.
  • In a separate bowl combine the honey and peanut butter. Microwave in 30-second intervals, stirring in between each one until the mixture is fully melted.
  • Add the peanut butter mixture to the bowl of dry ingredients and mix well until all combined.
  • Pour mixture into a parchment paper-lined 9×9 pan and place in the fridge to set for at least 30 minutes.
