I can not believe that is it almost spring! Did you know that the first day of spring is March 20th? Crazy, right? It is so so soon and with the warm sunny weather, I find that am reaching and searching for creative, healthy recipes that keep me full and provide all the nutrients I need to keep me going from class to class then to work. So will that in mind I came up with this to die for Frech Creamy Cucumber Salad. It will have your taste buds exploding with hints of dill and creamy tzatziki.

Oh, and did I mention it only takes about five minutes to make and will keep you full all afternoon. It is sooo goood, you will be making seconds! That is right you can whip it up in no time. Not to mention you can eat it in so many different ways:  put it in a wrap, eat it on chips or cracker or just eat it by the spoonful. Eat it any way you choose!

Fresh Creamy Cucumber Salad

Ingredients
  • ¼ cup Cucumber
  • 2 tbsp Red Peper
  • ½ cup Chickpeas
  • 1 tbsp Red or Green Onion
  • ¼ cup Celery
  • ¼ cup Avocado
  • 1-2 tbsp Tzatziki
  • ¼ cup Cottage Cheese
Instructions
  1. Chop up all your vegetables into bite-size pieces then add to a bowl. Mix in the cottage cheese and tzatziki! You can top it will some yummy seeds such as pumpkin or sunflower.

    1. It is a greek yogurt and cucumber dip. I included it because I love it! You can leave it out if you do not have any on hand but it does make the wrap so much more yummy!! 🙂 Enjoy
