Hello summer, hello sunshine, and hello salsa! If you are in search of a fresh, crisp, summer recipe that will kick up your family barbecue then look no further. I have just the summer recipe for you. A simple, fresh, salsa recipe. The recipe combines fresh tomatoes, a rainbow assortment of sweet bell peppers, flavourful fresh herbs and zesty lime juice. A simple combination of ingredients that makes for a salsa that is bursting with flavour.  

One of the best things about this salsa is that it is super easy to kick up by adding an extra ingredient or two before serving it. Try adding fresh fruit like juicy pineapple, peaches or even mango. If you want to go a step further try adding black beans and jalapeno for a spicy twist or try adding some chickpeas and a dollop of plain greek yogurt for a creamy, tangy salsa. This little recipe is a staple in my fridge. It can be used in so many ways! I use it on salads, in wraps, as a side for nachos or just to dip my chips or crackers in! But to be honest it is so good I would eat it by the spoonful if it wasn’t considered weird.

Homemade Salsa

Serves: 2 cups
Ingredients
  • ½ Red Bell Pepper
  • ½ Green Bell Pepper
  • ½ Yellow Bell Pepper
  • ½ Shallot
  • 2 Tomatoes
  • 1 Clove of Garlic
  • 4 Leaves of Basil
  • 4 Sprigs of Thyme
  • 10 Leaves of Cilantro
  • ½ Lime
  • Salt
  • Pepper
Instructions
  1. Chop the tomatoes and peppers into small pieces to judge the size just think that it has to all fit into a bite on a chip. Place this into a bowl that you can seal.
  2. Next dice the garlic and shallot very fine and add this to the bowl.
  3. Chop the fresh herbs basil, thyme and cilantro being careful not to over chop them then add it to the bowl.
  4. Add the juice from half a lime then add salt and pepper to taste.
  5. Lastly mix it all together and let it sit covered in the fridge for a few hours before serving. This will allow all the ingredients to come together making for a more flavourful salsa.
