“Pass me the chocolate!” That is something I have been saying all too often lately. So that got me thinking… Is there a way I can get my sweet fix of chocolate without all the added butter, sugar, and the dreaded sugar crash. And that is when I came up with the idea of preparing some delicious little Energy Bites. These chocolaty, peanut buttery bites are packed full of healthy vitamins and minerals, and they pack a punch in the flavour department too! They will be sure to help tide you over till your next meal without the guilt of reaching for that chocolate bar.

They are soooo good even my fiance can’t put them down! They are now a go-to snack for him to take to work or to tide him over till we finish making dinner. And I pop two or three in a little container and take them with me when I go uptown so that I am not tempted to buy a cookie or doughnut to tide me over till I get home.  

This recipe is super easy and it doesn’t require baking, so if you are not the baker type this recipe is for you! There is no way you will be able to mess this one up, just place all the ingredients in the bowl, mix them together and scoop them into bites. If you are feeling a little fancy you can roll them in coconut and drizzle them with melted chocolate. You can even change out any of the ingredients if you don’t like them or if you want to make a different type of energy bite. Try adding 1 tsp of cinnamon or add some more dried fruit for a sweeter bite.  

Chocolate Peanut Butter Energy Bites

Ingredients
  • ⅓ cup rolled oats
  • ¼ cup shredded coconut
  • ¼ cup almond slices
  • ¼ cup chia seeds
  • ¼ cup dark chocolate chips or cocoa nibs
  • 1 tbsp craisins chopped
  • ¼ cup pumpkin seeds
  • ¼ cup sunflower seeds
  • 1 cup natural peanut butter
  • ¼ honey
  • 2-3 tbsp of cocoa powder
Instructions
  1. Mix everything together in a medium-size bowl. The consistency should be sticky and create a nice ball if it seems dry just add a little extra peanut butter.
  2. Next, scoop the mixture into 1 tbsp size bites then roll in coconut and drizzle with melted dark chocolate if you'd like.
  3. Then place the bites in the fridge for 1-2 hours to set before eating. Keep them stored in the fridge for up to a week in a container.

| Oats | Oats are an excellent source of carbs and fiber, they are said to help lower blood sugar levels and cholesterol as well.

| Coconut | Coconut is a great source of B-complex vitamins and contains a high amount of potassium.

| Sunflower Seeds | Sunflower seeds are a wonderful source of vitamin E, copper and vitamin B1.

| Pumpkin Seeds |  Pumpkin seeds are packed full of important antioxidants such as well as iron and zinc.

| Chia Seeds |Chia seeds are a great source of omega-3 fatty acids, fiber, antioxidants and they can help protect against heart disease.

| Dark Chocolate | Dark Chocolate contains lots of antioxidants and is said to have loads of health benefits in comparison to milk chocolate such as lowering the risk of heart disease.

| Natural Peanut Butter | Peanut butter is loaded with high amounts of protein and healthy fats that help keep you feeling fuller longer.

| Honey | Opting for honey over refined sugar is a better choice because it contains antioxidants which can help with eye health and can help protect against stroke or heart attack.
