Hoppy Easter Weekend 🐰 Are you excited for the long weekend? I know I am! And that is because not only do I have my wonderful family-in-law coming to visit but I also get to share this wonderfully easy Easter Macaroon Recipe with all of you lovelies. If you are a coconut lover like me then these delicious morsels will have your mouth watering and you won’t be able to put them down. Did I mention they are adorable too!! I mean they look like a little Easter nest for crying out loud. Tooo Cuuute!

| First Step |

This recipe is super easy, anyone can make it and that is why it is perfect for the kids to help with. First, scoop and pour the coconut into the bowl, then add the can of sweetened condensed milk, vanilla, and salt.  Then mix it all together until it is well combined then set aside.

| Second Step |

Now get out your mixer and your room temperature eggs. Crack the eggs whites into the mixer making sure that you do NOT get any yolk in them or medium peeks won’t form. Add your salt to the whites then mix on high until medium peaks form. Next, add the fluffy whipped egg whites to the coconut mixture that you set aside and gently fold in the egg whites.

| Third Step |

Now for the best parts, baking and decorating! Make 2tbps sized balls of your mixture and places them onto a cookie sheet and bake until they are golden brown. This takes about 20-30 minutes. After you are cooked all your delicious cookies wait for them to cool completely. Once they are cooled melt your chocolate chips following the instructions in the recipe below. Dip the bottoms of the cookies in the chocolate and let cool again. After the chocolate has hardened, flip them over and add a little dollop of melted chocolate on top to hold the mini eggs in place. And now you are done!! All you have to do it eat and enjoy 🐰

A quick, fun and delicious recipe to make with the whole family. Everyone will be coming back for seconds after you whip up these delicious Easter bunny nests.

Ingredients
  • 5½ cups unsweetened flaked coconut (lightly packed)
  • 1 (14-ounce) can of sweetened condensed milk
  • 2 teaspoons vanilla extract
  • 2 egg whites (room temperature)
  • ¼ teaspoon sea salt
  • 1 cup chocolate chips
  • 1 bag of mini eggs
Instructions
  1. Preheat your oven to 325 degrees. While the oven is preheating mix your unsweetened coconut, sweetened condensed milk, vanilla, and salt together well then set aside.
  2. In a stand mixer beat your whites until stiff peaks form.
  3. Now add your egg white mixture to your coconut mixture, gently fold in the egg whites.
  4. Melt your chocolate in a double boiler on the stove or in the microwave in 15-second intervals stirring in between every 15 seconds interval until the chocolate is completely melted.
  5. Dip the bottoms of your fully cooked macaroons into the chocolate and let cool. Then put a small drop of chocolate on top then add your mini eggs.
  6. Share with the whole family and enjoy.
