Preheat your oven to 325 degrees. While the oven is preheating mix your unsweetened coconut, sweetened condensed milk, vanilla, and salt together well then set aside.
In a stand mixer beat your whites until stiff peaks form.
Now add your egg white mixture to your coconut mixture, gently fold in the egg whites.
Melt your chocolate in a double boiler on the stove or in the microwave in 15-second intervals stirring in between every 15 seconds interval until the chocolate is completely melted.
Dip the bottoms of your fully cooked macaroons into the chocolate and let cool. Then put a small drop of chocolate on top then add your mini eggs.
