Chop the tomatoes and peppers into small pieces to judge the size just think that it has to all fit into a bite on a chip. Place this into a bowl that you can seal.
Next dice the garlic and shallot very fine and add this to the bowl.
Chop the fresh herbs basil, thyme and cilantro being careful not to over chop them then add it to the bowl.
Add the juice from half a lime then add salt and pepper to taste.
Lastly mix it all together and let it sit covered in the fridge for a few hours before serving. This will allow all the ingredients to come together making for a more flavourful salsa.
