Mix everything together in a medium-size bowl. The consistency should be sticky and create a nice ball if it seems dry just add a little extra peanut butter.
Next, scoop the mixture into 1 tbsp size bites then roll in coconut and drizzle with melted dark chocolate if you'd like.
Then place the bites in the fridge for 1-2 hours to set before eating. Keep them stored in the fridge for up to a week in a container.
