Chocolate Peanut Butter Energy Bites

Ingredients
  • ⅓ cup rolled oats
  • ¼ cup shredded coconut
  • ¼ cup almond slices
  • ¼ cup chia seeds
  • ¼ cup dark chocolate chips or cocoa nibs
  • 1 tbsp craisins chopped
  • ¼ cup pumpkin seeds
  • ¼ cup sunflower seeds
  • 1 cup natural peanut butter
  • ¼ honey
  • 2-3 tbsp of cocoa powder
Instructions
  1. Mix everything together in a medium-size bowl. The consistency should be sticky and create a nice ball if it seems dry just add a little extra peanut butter.
  2. Next, scoop the mixture into 1 tbsp size bites then roll in coconut and drizzle with melted dark chocolate if you'd like.
  3. Then place the bites in the fridge for 1-2 hours to set before eating. Keep them stored in the fridge for up to a week in a container.
